The Ultimate Tortilla 

I have been hankering after Trader Joe's (the best food store in S.California) "brown rice tortillas" since I arrived back in SA in May last year and had indeed planned to fill a case with them and freeze them upon my return. That did not happen as I was already seriously overloaded, as any one coming to Africa from the USA only knows. 

Being a gluten intolerant (see article for symptoms) family, all of us are always looking for ways of making our meals more delicious than ever and we have 'invented' some amazing dishes like our 'polenta pizza'  made in either the oven, a real pizza oven or a Weber or gas barbecue with a lid (see recipes for ideas) 

Mark & I also prefer Trader Joe's rice cakes as they are not so tightly pressed and hard, and are nice and crumbly, so for that last few weeks I have been adamant that I could make my own rice cakes. Well mountains of rice later, with many a burnt offering, I steamed the rice, shaped it, dried it and finally baked it.. I finally gave up and as a last resort decided to grind our amazing brown rice into flour and set out to find a rice tortilla recipe that could rival Trader Joe's. 

A long search on the internet resulted in several complicated recipes with eggs, tapioca flour, xanthan gum  etc, etc.. I mixed the rice flour with water, let it stand for a while and poured it into a pan. It actually worked, I mean really worked amazingly and so I made a pile of gluten free, delicious tortillas/pancakes/crispbreads/ricechips, call them what you want they are absolutely delicious. AND... wait for it... much nicer than Trader Joe's!! And so unbelievably easy.

So you can either buy the rice and grind it yourself (you need a proper grinder for this (either a grain grinder or Vitamix dry goods jug), or you can order the ready freshly ground brown rice flour and make your own or possibly (we are testing the shelf life and the postage system) you may even be able to order the ready made tortilla's!

Dear Mark and Mary-Ann,

I find that just for myself, I need more olive oil than average, as I have always had a dry skin, and now especially, over the age of 50 my skin is even dryer than ever. As soon I cut down on the cold pressed Olive Oil, my heel starts to crack open and becomes very, very painful to walk on. At one stage, this is before I started using cold pressed Flax   

Seed Oil and cold pressed Olive Oil, I had large pieces of skin, the size of a 1 Rand coin peel off between and under my toes. AND I am not taking any medication that could cause this condition. 

I bought a Cold Pressed Olive Oil, however, I did not get the same results, as when I use yours - not nearly the same!! The skin on my feet has started to peel again.

Your brown rice AND, SO TOO, ALL YOUR PRODUCTS, ARE AMAZING!!!! Your brown rice is acceptional - I can eat it own its own - JUST LIKE THAT. 

The Dischem in the Norwood Mall - I have bought many of your products there, even
before joining AND AM DISAPPOINTED that they say that they will no longer stock your products; please get back to me on this, as this shopping centre is 1 block from where I stay AND THANKS??
