How to cook your Quinoa
- Add 1 cup well-rinsed quinoa to 2-3 cups water (start with 2 and add more if it is too dry – grains are different with each harvested crop – so you just have to adjust the water as you go.)
- Bring to the boil with the lid on, then turn down to the lowest temperature keeping the lid on. NEVER stir quinoa as it will turn into porridge.
- Quinoa usually cooks within 15-20 minutes. Keep the lid on until you need to serve.
- You can add sweet or savoury ingredients to quinoa, just like rice and millet, or serve as a salad.

MEXICAN CHICKPEA QUINOA
- 1 Can chick peas
- 2 Small tomatoes, diced
- 2 Spring onions or leeks, finely chopped
- 1 Tbsp Mary-Ann’s EVOO
- 1⁄2 Tsp. cumin
- 1⁄2 Tsp. paprika
- 1⁄4 Tsp. chili powder or 1 fresh medium chili – finlet chopped
- 1 Tbsp tomato puree
- 1-2 Cups quinoa (or any wholegrain of your choice)
- 1 Tsp. Mary-Ann’s Garlic & Herb Salt
Place the quinoa in a pot on the stove and cook according to the above instructions.
Add the rest of the ingredients to the quinoa and heat through, then serve.
